I hope everyone had an amazing Valentine’s day yesterday. Hopefully you avoided eating copious amounts of brightly wrapped chocolates, and don’t have a food hangover as you read this. I had a long day yesterday, I don’t know if it was the pressure or build up of Valentine’s Day but it just seemed that I couldn’t do anything right. I scrambled to think of something special and elaborate to do for my guy, but had no luck. I even posted a Valentine’s Day workout for you all, but there was an issue with the audio that was not fixable. I felt so defeated! Finally at the end of the day it was time for my workout, one thing I knew would turn my day around, and it did! The gym was surprisingly busy for Vday, but I was able to do a simple, but intense workout. I left the gym feeling clearer, and realized that sometimes simplicity is the answer in life. I was completely satisfied with my workout, and felt like I “got the job done,” even though it was simple. I went home to my boo, and we decided to make a simple meal, listen to a few records, and just enjoy each others company. Simple.

- Preheat the oven to 325 degrees F . Line cookie sheet with parchment paper and set aside.
- In a large bowl, whip egg whites and cream of tartar until soft peaks form. Gradually sprinkle in the sugar and almond extract and keep whipping until the egg whites can hold a stiff peak, this will take about 5 minutes.
- Drop mounds by spoonfuls onto the prepared baking sheet.
- Bake for 15 minutes in the preheated oven, until golden brown. Remove cookies from the baking sheet and let cool completely on wire racks before serving. Meringue will be delightfully crispy on the outside and a moist in the middle!
