I love the natural richness, and smooth texture of beets. They are one of the most satisfying vegetables, and packed with vitamins. Beets are a concentrated source of Betanin which aids the body in detoxification. Making this salad the perfect lunch or snack on a Monday after the weekend!
2 beets, roasted and peeled
2 garlic cloves or garlic powder
1/4 teaspoon Kosher salt
2 tablespoons tahini (sesame paste)
2 tablespoons lemon juice
2-4 tablespoons water
Slice the beets into thick matchsticks. Add salt and garlic to the tahini, lemon juice, and water mixture. Whisk until smooth. Depending on how thick the sauce is, you may want to thin it with one or two more tablespoons of water. It should be the consistency of a creamy salad dressing. Add dressing to the chopped beets and toss to combine. Garnish with a lemon wedge and parsley, if desired.
