The past few weeks have kicked my ass! It’s so great that you all are so keen and keeping me super busy with Pilates sessions and group classes, but it has seriously cut into my blogging time! So today I’m combining your workout and an easy healthy recipe. Last week I posted a short video on how to properly do an ab curl on the stability ball , so hopefully you’ve all been practicing and are ready for today’s Full Body Stability Ball Workout! This workout will challenge your core like crazy, and sculpt your body as you stabilize. You’ll be ready for summer in no time! The best part, it’s a great quick fix because I know we all get busy this time of year!
As the days get warmer and longer we start to crave fresh foods with lots of fruits and veggies. These foods are easier to digest so we don’t feel heavy or too full (cause who wants to feel stuffed when it’s hot out!) Fruits and veggies also contain mostly water, so they help us to stay hydrated and refreshed during the summer months. Here’s a perfect example of a healthy summer meal that I love to eat after a tough Pilates session!
Cold Summer Squash Soup With Lime
A refreshing summer meal!
2-4 (depending on the size) yellow summer squash
Juice from 1 whole lime
1 clove garlic, minced
1 1/2 cup water
2 tbs coconut oil
1 heaping tbs fresh ginger, grated
1 tsp high quality sea salt
ground pepper to taste
Step 1: Remove skin of squash and cut flesh into chunks. Place chunks of squash in a large pot and boil until tender.
Step 2: Once squash is fully cooked drain excess water.
Step 3: Place cooked squash into a blender, add all other ingredients and puree.
Step 4: Let soup cool for about an hour in the fridge and then serve with sea salt and zest of lime. It’s so refreshing and delicious!
Kale Caesar Salad
A healthy take on a classic summer salad!
4 tsp white miso paste (I use Cold Mountain Miso)
2 tbs cold pressed olive oil
Juice from 1 whole lemon
1 clove garlic, minced
1 tbs apple cider vinegar (or normal white vinegar works too)
1 whole head of kale, stems removed, leaves washed
Step 1: Place all ingredients except kale into a food processor or blender, and blend until smooth. That’s it, really!
Step 2: Place kale in a large salad bowl and toss with dressing until leaves are fully coated. Serve right away, adding bacon bits or even croutons if you don’t have any issues with gluten for a more authentic caesar salad.
This is my perfect summer meal, I ate it with a half slice of extra dark rye toast topped with avocado and cucumber slices for extra veggie love. So delicious! What are your favorite summer meals?
