Sometimes the best things in life just happen by accident! The other day while grocery shopping I picked up what I thought was coconut oil, a regular item around our house. When I got home and took a closer look I realized it was actually Coconut Manna creamed coconut. I’m so happy I stumbled upon this product though, because it is so so sooo yummy! Coconut Manna has a seriously rich coconutty flavor, and it’s less oily than regular coconut oil itself. You can make it into spreads, mix it into smoothies, and it’s particularly good for baking. I decided to whip up some simple raw macaroons, and was pleasantly surprised when they turned out to be delicious! They taste like the frosting in the middle of an Oreo, mixed with a coconut! The best part…they’re completely raw and natural.
Raw Coconutty Macaroons
1 cup Coconut Manna, melted (to melt, put jar of Manna is a pot of warm water for 5-7 mins until it’s creamy and smooth)1 Tbs raw organic honey
1/2 cup unsweetened coconut flakes
1 tsp pure vanilla
Step 1: Place all ingredients into medium sized bowl and stir vigorously so that Coconut Manna stays soft and pliable. You have to move kind of quickly with the Manna once it’s melted because it cools quickly, and hardens.
Step 2: Roll mixture into small balls about 1/2 inch wide (don’t make balls too big because they are very rich!) Sprinkle extra coconut flakes onto a plate and roll the balls in coconut flakes.
Step 3: Line a large plate with parchment paper and lay the macaroons out on the plate. Place in the fridge for 20 mins until they are firm. Eat, serve, share, enjoy!
