5 Tbs raw honey
4 Tbs organic butter or coconut oil
1 c plain Greek yogurt
1 large egg (vegan chia egg will work too)
1/4 c freshly squeezed lemon juice
1/2 tsp of grated lemon rind
2 c Bob’s Red Mill GF flour
1 1/2 tsp baking soda
pinch of salt
1/2 poppy seeds
a few dashes of nutmeg (optional)
Step 1: Preheat oven to 3 75 F and pre-grease muffin tins. On stove top melt butter/coconut oil and honey over medium heat stirring constantly. Remove from heat once smooth.
Step 2: Beat together yogurt, egg, lemon & rind, then add honey mixture and beat well.
Step 3: Sift all dry ingredients into large mixing bowl, make a well in the center and add wet ingredients. Mix evenly.
Step 4: Fill muffin tins with batter and bake in the oven for aprx 25 mins.
