It’s the end of the week again, and more importantly it’s the end of January! This means that we made it through one more month of winter, and are that much closer to the warmer months to come. When it’s cold outside I find myself craving rich, and creamy foods. This recipe is just the thing to satisfy the need for a thick, and rich, belly warming meal with zero guilt.
Creamy Whipped Sweet Potato
The easiest, most delicious side dish ever!

2-3 medium sweet potatoes
1/2 cup green onions
1/3 cup unsweetened almond milk
1 1/2 tsp cinnamon
2 tbs crushed walnuts (optional)
pinch of sea salt
1. Peel sweet potatoes and chop into small cubes. Chop green onions finely and set aside. Boil until potatoes are tender, about 20mins.
2. Once fully cooked place sweet potatoes in a food processor adding in green onions, cinnamon, almond milk, and salt. Puree all ingredients on a very high setting (whip if available) while sweet potatoes are still warm.
3. When mixture is completely smooth serve right away, topping with walnuts if desired. It’s that easy!
