I have been obsessed lately with overnight oats! I’ve posted about them in the past, and the benefits that soaking your grains have on your digestion, but lately soaked grains have proven to be the most satisfying, consistent way to start my day. This combined with the fact that it’s peach season here in Ontario means this recipe makes so much sense, so here it is…Peach Cobbler Overnight Oats!
Tastiest Spring Breakfast ever!
1/2 cup flash frozen or fresh peaches (dependent on the season where you live)
3/4 cup of oats (gluten free if you’re so inclined)
1/2 cup Greek yogurt (I use Chobani Plain Greek Yogurt)
1/4 cup unsweetened vanilla almond milk
1 tsp of honey
1 heaping scoop of protein powder (I use Sunwarrior raw vegan protein)
2 tbs of cinnamon (because I REALLY like cinnamon)
1 pinch of nutmeg
1 tsp organic vanilla extract
Step 1: In a glass jar or container place all ingredients excluding peaches. Stir thoroughly to coat oats in liquid mixture.
Step 2: Add peaches, and seal the jar/container firmly. Place in the fridge overnight.
Step 3: In the morning remove the oats from the fridge and reheat in a saucepan over medium heat.
This combined with a freshly squeezed green juice is divine!
This recipe has a ton of protein, is rich, creamy, and absolutely does not taste as healthy as it actually is. That’s the best part! Enjoy this recipe on a nice Spring morning;)
