This week I feel like summer is in full swing! Even though we’re still a few weeks away from the official start of summer, I’ve been re-discovering the joys of a cold treat on a hot day, or a fresh summer salad, and lots of fresh fruits. Last week I did a post about how I was lusting after juicy, hydrating fruits and veg, and to be honest not a lot has changed this week. I’m still craving fresh foods that are best enjoyed while sitting in the sunshine. That’s why this week I have another great summer fresh recipe for you!
Traditional Tabouli With Quinoa
The protein packed twist on a traditional summer salad!
Fresh Italian Parsley, about 2 bunches finely chopped
6 spring onions, about 1 bunch or 6 green onions, finely chopped
1 container of cherry tomatoes, finely chopped
3 lemons, freshly squeezed if possible
5 tablespoons olive oil
1 cup quinoa, cooked
Ground black pepper to taste
High quality sea salt
