As much as I love Summer, I’ve found myself dreaming of Fall lately. The beautiful colors, warm soups, and spicy cinnamon flavors. I don’t want to wish the Summer away, because we’ve been having such a great one. But I did find myself wanting a little taste of Fall. That’s why I decided to whip up this tasty treat the other day!
Spicy Cinnamon Baked Apple
A taste of Fall
1 small or medium apple
1/2 cup of my Easy Peanut Butter Icing (I used raw almond butter this time, so yum!)
Juice from 1/2 lemon
2 tsp cinnamon
1/3 cup chopped walnuts, pumpkin seeds or nuts of choice (I used pumpkin seeds because that’s what I had in the house)
Step 1: Preheat oven to 350 degrees. Core your apple with a paring knife or apple corer. If the apple is organic wash thoroughly and leave the skin on, if it isn’t remove skin.
Step 2: Once core is removed begin to fill the center of the apple with the nut butter icing.
Step 3: Sprinkle with cinnamon, and squeeze lemon juice in the bottom of the backing dish. This adds moisture so the apple doesn’t dry out. Cover dish and bake apple in the oven for 45mins.
Step 4: Wait for apple to cool slightly and then serve, adding chopped nuts and more cinnamon as garnish. I topped mine with some almond yogurt for an a-la-mode baked apple!
My eyes were clearly bigger than my stomach, because this dessert just seemed to grow and grow. I couldn’t finish it all, but I saved half of it in the fridge and reheated it the next day! It was perfect!
