It’s getting a little colder, the days a little longer, so you deserve a sweet treat. I love all the amazing treats this season brings, but I like to make them as healthy as possible. This recipe satisfies my love for warm cookies fresh from the oven and are pretty guilt free too! I made this recipe for a dinner party last Saturday and they were eaten up within minutes!
1/2 cup organic dark chocolate chips
1/2 cup unsweetened shredded coconut
3 tablespoons canned coconut milk
1 tablespoon coconut flour (I used hemp flour because I had it in the cupboard so mine had a darker tinge)
1 teaspoon arrowroot powder
2 tablespoons pure maple syrup or maple flavored agave
1/2 teaspoon natural vanilla extract
Preheat oven to 350. Lightly grease a baking sheet with oil.
Add all ingredients to a large bowl and mix together with a fork. When thoroughly mixed, take spoonfuls of it, and drop it onto the baking sheet to form 12 equal pieces.
Bake for 10 to 12 minutes until slightly golden brown on bottom. Leave to cool for at least 20 minutes on baking sheet so they can harden. They are so delicious!
