I just HAD to share this recipe! I made this dish this week and it was a-mazing, I’ll definitely be adding it to my regular rotation. I was able to prep the sweet potatoes and dressing in about 20 minutes flat, which makes this recipe perfect for healthy eaters on the go.
Maple Sweet PotatoesDifficulty: 1/5
1 large sweet potato, chopped into 1/2 inch cubes1 tsp cinnamon
1/2 cup pumpkin seeds
salt and pepper to taste
1 tbs B grade maple syrup 1 tbs apple cider vinegar
2 tbs olive oil
Step 1: Preheat oven to 350 degrees. Chop sweet potatoes (leaving skin on) into 1/2 inch cubes, spreading them into a large baking dish (preferably one with a lid).
Step 2: In food processor or jar place all ingredients for sauce and blend vigorously.
Step 3: Pour sauce over over sweet potatoes coating evenly. Garnish with cinnamon, salt and pepper, fresh rosemary, and pumpkin seeds.
Step 4: Place in oven uncovered for 10 mins, remove briefly to stir sauce around, then bake with a lid on for another 30 mins. Let cool and serve!Recipe adapted from Healing Foods/Vegetarian Times magazine.
