One of my go-to healthy meal ideas is always a variation on the fresh bowl. It started a few years ago when I was still a vegetarian. I found that a bowl was the perfect, and most satisfying way to get everything I needed in one shot! Inspired by Fresh restaurant’s most recent cookbook (and personally my favorite), simply titled “Fresh,” I’ve since made so many variations on the fresh bowl I can’t count. The other day while experimenting with this old favorite, I created something especially delicious that I just had to share with all of you.
Asian Inspired Fresh Bowl
- 1/2 of a 300g package of soba noodles
- 2 cups bok choy
- 2 large tomatoes, chopped in half
- extra firm tofu, cut into steaks
- 1/2 cup fresh cilantro
- sesame seeds
- dulse flakes
- 1/4 cup low sodium soy sauce or tamari sauce
- 1 tbs olive oil
- 1 tbs lemon juice
- 2 tbs apple cider vinegar
- 1 tsp raw honey
- 2 tsp fresh ginger, grated
- chili flakes to taste
Step 1: Bring water to a boil and cook soba noodles until tender. Set aside and let cool.
Step 2: In wok or large sauce pan saute bok choy with a little bit of water or oil. Meanwhile begin to grill tofu steaks and tomatoes over high heat on grill a pan. When both are seared and slightly browned take them off the heat, about 6-7 mins a side.
Step 3: In a glass jar combine all sauce ingredients and shake until oil fully absorbs with the other ingredients into a thin brown liquid. Pour over cool soba noodles.
Step 4: Start assembling your fresh bowl, soba noodles on the bottom, bok choy, tomato, and tofu steaks. Sprinkle dulse flakes, sesame seeds, and garnish with fresh cilantro and you’ve got yourself a delicious Asian inspired meal!
